White beans and rice is a recipe that people who lived in the Delta del Ebro, a rice-growing region, used to eat. Over the years their recipes keep their traditional flavor, although preparation techniques have evolved. By combining this basic ingredient with vegetable protein sources, such as white or red beans, we will get a nutritious, flavory and satisfying dish.

Beans are not only a very nutritious food, since for every 100 grams it provides a total of 19 grams of protein, but a very affordable ingredient as well. Making a good choice of beans is one of the secrets to success when cooking. They don’t have to be dry, and if they’re wrinkled, when you cook them the skin will peel off and break. If you choose white beans, it is recommended that they are very white. And it’s important to soak them the night before and clean them well before cooking.

This dish is typical of all of Spain, but especially popular in Murcia, since it is a traditional dish of the cuisine of that province. And perhaps for this reason, there are many variations as to the ingredients and the way of preparation. Obviously, you can not miss the beans and rice, but neither the tender garlic nor, of course, the artichokes.

Rice with beans: A delicious recipe

It won’t take long to prepare this recipe, as the ingredients are found in any store, and an amazing flavor is guaranteed.

Ingredients

  • 2 tbsp of olive oil.
  • 2 cups of brown rice.
  • 3 cups of vegetable broth.
  • Half a cup of ketchup.
  • 2 tsp of onion powder.
  • 1 tsp of garlic powder, same amount of cumin and dried coriander.
  • ½ tsp of cayenne.
  • 2 tsp of paprika.
  • 2 cups of beans.
  • Salt and pepper.

Preparation

  1. Pour olive oil in a pot to cook the rice. Place on medium-high heat for about five minutes, or until rice turns slightly brown.
  2. Add the vegetable broth and wait for the rice to boil, on low heat and pot covered. 15 to 20 minutes later check if rice fully absorbed the vegetable broth.
  3. Then add the tomato sauce, season with the spices and stir.
  4. Add the beans and let it simmer for about five minutes.

Helpful tips

When preparing the rice, be sure it is spongy and has absorbed all the broth before placing the rest of the ingredients. If it is too dry you can add more vegetable stock and if there’s too much liquid, simply remove the lid and let it evaporate. 

Other ingredients should be added soon after the rice has finished cooking. 

Many people like to enjoy it with chicken, lamb or beef meat, as well as quesadillas, fajitas and tacos. However, it serves perfectly as a main dish alone.
